Tho one can add some Kitchen Bouquet to it if it’s a color issue. :) But it’s not a typical tomato-based minestrone – with beans and pork/bacon as the base.

These days, the beans and pasta seem to float to the top of the can – so it’s best cooked on a stove. Years ago they had a different size can – similar to Progresso – and this seemed to help with this particular problem.

Either way, the flavor is incredible. In my opinion, of course. :)

I thought minestrone was supposed to have tomato sauce in it. The finished product is a dull brown in color and looks nothing like the picture on the can. It was also stuck in can (coagulated?), and I had to beat it out. Not sure if I will eat this stuff.
